The distinctive aroma and flavour of Birra Moretti make it an ideal accompaniment to this colourful and moreish antipasto. Birra Moretti has a clean taste which contrasts the rich, smoky flavours of the mozzarella whilst complementing the sweet freshness of the ripe peppers and tomatoes.

Makes: 4 large napoleoni
Preparation time: 10 minutes
Total cooking time: 20 minutes

You will need:
1 large aubergine
2 large tomatos
2 large yellow peppers
Salt and pepper
Basil oil
Smoked mozzarella
Extra virgin olive oil

How to make:

  • Slice the aubergine and tomatoes into rounds

  • Cut the peppers into quarters and remove seeds

  • Grill the peppers and aubergines without brushing them with oil

  • Pre-heat the oven to 190degreesC/375 F/gas mark 5

  • Arrange the grilled vegetables and sliced tomatoes onto a baking sheet. Starting with the largest slice, keep layering all the ingredients into a stack

  • Season with salt and pepper and top with the mozzarella

  • Bake for 10-12 minutes or until the cheese is melted

  • Garnish with basil oil and drizzle extra virgin olive oil on top.  Perfect with salad.
