Birra Moretti is the perfect accompaniment to this succulent and satisfying pork recipe. The clean acidity and fine bubbles in the lager are particularly refreshing when served alongside the moist roasted meat.

You will need:
450g pork loin
225 ml extra virgin olive oil
1 large onion
2 medium carrots
1 stalk celery
55 ml balsamic vinegar
1 bay leaf
1 sage leaf
Salt and black pepper
How to make:
- Roughly chop the onions, carrots and celery
- Place in a food processor with the oil and balsamic vinegar and pulse until pureed
- Season the mixture with salt and pepper and arrange it in the bottom of a roasting tine
- Place the pork in the roasting tine along with the sage and bay leaves
- Roast for approximately 1 hour at 190 degrees C/ 375 F/ gas mark 5
- Remove the pork from the tin, carve into slices and arrange on a platter
- Spoon the hot sauce from the roasting tine over the pork and serve.
